Sauerkraut, Pickles, Kimchi, Miso – Discovery of Fermentation *The art of fermentation or how to tame bacteria.* Fermentation is one of the main pillars of Raphaël's cuisine, the founder of Jardins de Chivrageon. This workshop is therefore an essential part of our universe. Come and discover the magic of bacteria on your plate! In this introductory workshop, you will change your perspective on bacteria. The goal of this course is to provide you with the basic knowledge needed to produce fermented foods at home. The Living element accompanies us throughout the workshop: with vegetables and fruits from our own gardens (Bio-Bourgeon certified), but also with the bacteria we welcome in our preparations. In this course, we will cover the following topics: * Theoretical basics: What is fermentation, the different types of fermentation, hygiene, and necessary materials * Benefits and advantages of fermentation: shelf life, flavors, nutrients, and the microbiome * Basics of lactic fermentation (e.g., sauerkraut or kimchi) * Recipes and their mastery: creativity, intuition, and improvisation in the kitchen The workshop lasts 3 hours and is structured as follows: * Introduction and explanations * Cutting and preparation * Shared meal with tasting of about fifteen fermented products You will go home with a small summary booklet and two jars of ongoing lactic fermentation.
The workshop takes place from 6 participants (maximum 8). By public transport: You can take the train to Allaman station, then bus 721 and get off at Féchy Cassivettes. From there, it is about 500 meters on foot to reach Jardins de Chivrageon.

General Information
The taster course on fermentation takes place at Jardins de Chivrageon in Aubonne, Switzerland. In this three-hour workshop, participants will learn the basics of fermentation and prepare various fermented foods themselves.
