From the vine to the wine: In this course, you will learn theory and practice in viticulture. Hobby winemakers and wine enthusiasts will learn everything about the biology, care, and breeding of the vine. At the end of the 9-day course, you will be able to manage a vineyard plot ecologically sensibly on your own. And you will know the factors that shape the character of wine. Content

• Biology of the vine (structure of the vine, annual cycle, flowering, grape ripening, photosynthesis, and water balance)
• Pruning of the vine (in practice)
• Structure and evaluation of the most important training systems in Switzerland
• Planning a new planting and selection of support materials
• Recognizing the most important deficiency symptoms
• Site-adapted fertilization planning
• Possibilities of soil care and their effects on the vine and environment
• Overview of vineyard work; leaf work and vine care in practice
• Grape harvest control and grape harvest
• Causes of damage (especially diseases and pests)
• Principles of integrated production and organic farming
• Application technology, plant protection planning, and bird control
• Influence of soil and climate on the wine (“terroir”)
• Breeding and propagation of the vine
• Choice of suitable varieties and rootstocks
• Structure of Swiss viticulture
• Brief introduction to tasting Learning objectives After completing the continuing education course, you will be able to
• manage a vineyard plot independently, taking ecological aspects into account;
• select and justify appropriate management measures specific to the region;
• know and explain factors that shape the character of the wine.
