Description
In the workshop, we acquire knowledge about fermentation and try out various recipes with mountain vegetables, herbs, and berries. This is intended to be a first step towards developing marketable products. Organized by the Innovation Center for Mountain Agriculture (IZB) and the IG Mountain Vegetables. Led by Laila Tulinski from the Institute for Food and Beverage Innovation at ZHAW. She researches fermentation and brings her extensive knowledge. The IG Mountain Vegetables is (still) a small group of people committed to joint product development in collaboration with IZB and ZHAW. Some grow vegetables themselves and bring them to the workshop, others collect herbs and berries, while others are particularly interested in preservation. A joint tasting takes place in winter. For questions or interest in the IG, Steffi Bonsack is happy to provide information at 076 319 54 55. The workshop is also open to people who are not members of the IG Mountain Vegetables. Participation is free for IZB association members. Participation costs for non-members are CHF 50, including lunch and materials. All information about IZB and membership: www.i-z-b.ch.
