Description
Panettone is considered the pinnacle of Italian baking: a delicately melting, aromatic pastry that requires a lot of patience, care, and good craftsmanship. In this course, we leave the hustle and bustle of everyday life behind and fully dedicate ourselves to the play of dough, time, and fine ingredients. Together with bread sommelier Urs Röthlin, you will discover the variety of this traditional specialty and learn how airy, light panettone are created from a living Lievito Madre. During the course evening, you will make different variants – from the classic panettone with candied citrus fruits to a rich chocolate version and the springtime Easter dove (Colomba Pasquale). The program is rounded off by small mini-panettone with nuts and figs or with apricots and almonds, giving you room for creativity. Learning objectives The focus of this course is understanding the special technique behind panettone & co. You will learn how to make a panettone traditionally with Lievito Madre, how to care for your mother dough, and recognize optimal maturity levels. We deal with long dough fermentations, flavoring, and the use of high-quality ingredients such as chocolate, nuts, and fruits. You will receive practical tips for a stable dough structure, even porosity, and the perfect baking process, so you can confidently implement the different variants in your own kitchen.
